Kurma Mariami AA: Incorporating Dates into Cuisine Beyond Sweet Treats

Kurma mariami aa

Kurma Mariami AA isn't just for the Raya tray

Most people buy Kurma Mariami AA for one reason: to eat straight out of the box. Fair enough, it's soft, dark, and sweet without being sticky-sweet like Medjool. But once you've got a kilo sitting in the fridge, there's more you can do with it than snacking between meals.

Stuff it instead of buying stuffed dates

The pre-stuffed dates sold at hari raya bazaars usually use a firmer date because it holds its shape better on a tray. Mariami AA is softer, so it tears a little when you slice it open — that's fine for eating at home. Split it lengthwise, take out the seed, and push in a piece of toasted almond or a small cube of soft cheese. Fifteen dates like this on a plate looks more expensive than it cost.

Blend it down for a glaze

Chop four or five dates, cover with hot water for ten minutes until they soften further, then blend with a splash of the soaking water, a squeeze of lime, and a pinch of black pepper. Brush this over grilled chicken or lamb in the last five minutes of cooking — the natural sugar caramelises fast, so watch it doesn't burn. This is closer to how dates get used in Middle Eastern cooking than as a dessert ingredient.

Add it to rice, not just kuih

Diced Mariami AA stirred into nasi minyak or a simple pilaf, alongside fried shallots and cashew, does the same job that raisins do in biryani — a pocket of sweetness against the spice. Add it in the last ten minutes of cooking so it warms through without turning to mush.

Keep a jar of date paste on hand

If you cook with dates often, blend a batch of pitted Mariami AA with a little water into a thick paste and keep it in the fridge for about two weeks. It stirs into oatmeal, spreads on toast in place of jam, or goes into a marinade without extra sugar. Because Mariami AA has less fibre-forward chew than Deglet Noor, it blends smoother.

Why grade matters here

For cooking, you don't need the top grade. AA is the right pick precisely because it's softer and blends or stuffs easily — the premium AAA grade is better saved for eating on its own, where the size and skin condition actually show. If you're buying specifically to cook, ask for AA and save a bit of money over AAA.

Prices and stock for Malaysian and imported kurma varieties move with the season, so check current grading before you order for cooking versus for hantaran. For a general sense of what different grades cost, our date pricing and grading guide breaks it down. And if the sweet side of dates interests you more than the savoury, see how we used the same fruit in a Ramadan dessert spread.
