Why the tasting room pairs tea with dates

At a kurma sampling table, plain green tea shows up more often than water. Not because it does anything special to the fruit — it's there as a palate reset. Sip plain water between two dates and the second one still carries a trace of the first; sip a small cup of unsweetened green tea and the sugar coating actually clears. It's the same logic wine tasters use crackers for, just adapted for fruit.

Getting that cup right matters, though. Pour water straight off a rolling boil onto green tea leaves and you scald them — that's where the sharp, grassy bitterness most people blame on "cheap tea" actually comes from. Let the water cool to roughly 75–80°C, just past the point where small bubbles start rising but before a full boil, and steep for 60 to 90 seconds. A decent loose-leaf batch is good for a second steep too, usually run 20–30 seconds longer than the first — the flavour opens up rather than fading the way a teabag's second use does.

Loose-leaf versus teabags, and why it matters here

Loose-leaf tea holds its flavour through two or three steeps; a teabag is built for one pass and turns flat and papery on a second. If tea is going into a tasting or gifting routine alongside kurma — where the point is a clean, repeatable cup — loose-leaf is worth the slightly higher price. Buy it in a sealed tin, not a bag, and keep it away from direct light; green tea leaf fades and dulls faster than black tea does when it's left out on a shelf.

Putting it together at home

You don't need a tasting room to use this pairing. A short mid-afternoon break — one cup, one or two dates, five minutes off the desk — works as a plainer version of the same idea. Skip added sugar in the tea itself; the date already supplies the sweetness the pairing is built around, and a sweetened cup just flattens the contrast that makes it work.
